Breakfast - Ya know, I'm really having trouble getting a good breakfast in early in the morning. I get up really early because of Joey, but then I never end up eating until like 10am or later! So strange. Anyway, I ended up just grabbing a dark chocolate/peanut butter protein bar on the way out to Joey's Music Class. Quick and easy.
Lunch - MEAT LOAF LEFTOVERS!!!!! with egg noodles. It was even better reheated!
Snacking - every day I tell myself that I need to write this stuff down as I go and I forget. But I don't think I really had much during the day. Before dinner, I did have about 5 modest bites of chocolate peanut butter ice cream. Just to wet my whistle. It hit the spot!
Dinner - I really impressed myself tonight. I had a few pounds of chicken to cook and wanted to try something new. Out of my ass, I pulled the words "Santa Fe Chicken and Rice." The only time I've ever seen that was in a Smart Ones box. So I checked some recipes online and made something which was a combination of a few recipes. I'm going to share it with you.
- First, I cubed 2 chicken breasts and cooked them up in a pan with olive oil
- In another pan, I put 1 cup of uncooked rice - yes - uncooked with about 1-2 teaspoons of olive oil and just basically heated up the rice.
- Then I added 1 3/4 cups of chicken broth, 1 cup of Pace Picante sauce (I used hot) and a teaspoon of Cumin. Mixed it up, got it to a boil and then turned it down and let it cook lightly. Cooked for a total of 15 minutes.
- Then add in a 15oz can of black beans and a 15oz can of corn (both rinsed and drained) and added the chicken to the concoction. Mix it all up and top with a light coating of shredded cheddar cheese. Keep this on heat, covered for about minutes and then serve.
This meal was AWESOME! Definitely could serve a family of 4 on this recipe as I had 2 helpings and so did Kristyn and we have leftovers that will either be 1 really big lunch or 2 small ones. Really happy about this experimentation and you should all try doing this!
Snacking - I had 2 ice pops at night. To bring some of you back in time - these were like BOMB POPS or the FIRECRACKER from the ice cream truck. BUT they are small. Not ice cream truck size but regular ice pop size. Delicious!
Another good day I'd say. Moving right along! 3 more days and I'll hit the 1 month mark. I'm pretty excited because I have not done this well for this long in a very long time. If I keep this up another month, I think I'll fit back into a lot of my dress shirts that have been put down to the basement recently. :-)
