Breakfast - I went back to breakfast sandwich-town for this one. But this time, I used an old but new tool! Years ago, I'm not sure who gave it to me - it may have been my sister - but I got this microwaving bacon tray called the "Bacon Wave." Basically, you just put the bacon in there and pop it in the microwave and it's supposed to come out perfect. Now, It WAS Turkey Bacon, so it's not quite the same as great bacon, but it's a good and healthier substitute. In fact, each slice of bacon is only 40 calories and 1.5 grams of fat. pretty good and not terrible tasting. Anyway, this thing works very well!
So my breakfast sandwich included 2 egg whites + 1 whole egg scrambled with 2 slices of turkey bacon on an everything bagel thin. I also had a glass of Trop 50 OJ.
Lunch: - Well, this happened really late. It was after 3pm and I realized I had not gotten to eating lunch. I was home with the kiddies by myself, which certainly makes finding time to make a good lunch harder! I made an Elio's pizza. Quick and easy, not too crazy bad in terms of portion control and in spite of anything people may say, it's a pretty decent frozen pizza.
Dinner - I went completely new this time. I have NEVER done this before, but I made a meat loaf!!!! I was at the supermarket the other day and I saw this thing by the ground beef that was 3 different meats and it was a meat loaf mix. So I grabbed it and gave it a shot. The 3 meats, an egg, 8oz tomato sauce, pepper, salt, 1/4 of a large onion chopped up, thyme, brown sugar, dry mustard, and I think that's it. Came out AWESOME! I wanted to throw this photo of the cheddar broccoli mac & cheese because it's quite good! You may want to try it. Not because it's healthy. Just because it's very good! :-)
And in this episode of why Kristyn and I get along so well - When I told Kristyn I was making meat loaf, her very first reaction was something like this:
Snacking - I didn't really snack today at all. Morning and lunch were late and then the meat loaf was very filling! Looking forward to lunch leftovers tomorrow!!!!!
