Breakfast: So today, I had a very late breakfast. It was almost 11:30. AND it is Sunday, so I decided to make this complete breakfast for Kristyn and I.
Pancakes, 1 egg white + 1 whole egg scrambled, and 2 turkey sausage links. I know it looks like a lot, but it's actually just under 400 calories for the breakfast. I also had a glass of Trop 50 OJ. This hit the spot and held me over for quite awhile.
Lunch: Lunch was quite late too - had leftover cajun pork and egg noodles at 3:30. Good leftovers for sure.
Snacking: Granola bar - just before dinner.
Dinner: Made a teriyaki chicken stir fry. Now I've made chicken stir fry before but never did it come out this good. It was freaking awesome! Started off by marinating the chicken in teriyaki sauce for about 2 hours. Then chopping up some carrots, broccoli, pepper and onion along with cauliflower rice.
Next, I cooked up the veggies - started with olive oil and then added water to steam it up. Cooked the chicken separately and then combined them with all the leftover teriyaki sauce mixed in.
Served over a bed of white rice, here is my masterpiece. It was seriously the best this has ever come out. I'm very proud of myself for this one and I plan on bringing the leftovers for lunch with my dad tomorrow. Hopefully he'll want it. :-)
Snacking: All I had later was a frozen Minute Maid Lemonade ice. It was glorious and I enjoyed that while watching the Yankees DESTROY the Red Sox.
Let's have a little side bar about the Yankees. They are SOOOOO much fun to watch this year. Now Saturday night - that was torture. It was the first time I ever decided "ok, I'm just not watching this game" this year. Even still, I had DVR'd the game and did the fast version of the game - using the 30-second skip feature to get pitch to pitch and just see if there was anything worth seeing. I usually like to watch the whole game, listen to the commentary, learn a little bit - but Saturday - couldn't do it. Outside of that, holy moly they are making this season fun. I am pumped and can't believe how well they are doing. And it's also really nice to have them be so good and not be so hated by everyone. For the most part, a bunch of seemingly good guys playing great baseball. This summer - Yankees/Red Sox rivalry at it's best. Can't wait to see how this all turns out.
