Hey yo!!! Day 3 and going strong - some would say it was my best day so far.
Starting weight - 4.9 lbs down from start of day 1
Ya know what? I actually really enjoy cooking. Mostly because when I cook, Kristyn is REALLY appreciative and it makes me feel good. Today, I cooked for her twice and because of that, I ate really well!
BREAKFAST: First of all, has anyone noticed that the price of eggs is back to normal again? i got a dozen jumbo eggs for $1.99 the other day! WAHOO!!! So I am gonna be on an egg kick. I made 5 eggs. 2 for me, 2 for Kristyn and 1 for Giuliana. :-)
But the fun part of breakfast was my potatoes. Did you know that if you cut up a baked potato into small pieces (cubes, strips, whatever) they cook pretty darn fast in the air fryer - like 15 minutes, without doing any extra prep to the potato. No boiling, no soaking - no nothing! So I have been experimenting with this lately. Today, I tossed them in a small amount of olive oil and then seasoned it with salt, pepper, onion, garlic and cajun seasoning. Air fried them for 10 minutes, then tossed them and put 'em on for another 5. They were crispy on the outside and soft on the inside. Piece of cake! Add some light orange juice and a couple pieces of 647 wheat toast, and here's my breakfast for the day! (Don't be fooled, I also used ketchup - not pictured.)
Give the air fryer potatoes a shot. Really easy and you'll be happy with the result. Restaurant quality, for sure but very little oil.LUNCH: Suddenly, it was 2pm and I had not had lunch. Probably because breakfast was not until almost 10am! I had bought the stuff the other day to make a nice fresh batch of pasta fagioli, which I have never done before, but I had a good feeling about this. So I grabbed what looked to me like a reasonable and tasty recipe and went for it!
Let me tell you - this was FANTASTIC!!!!! And it looks like a lot, but it really was not all that much work. The most work was the stress of not knowing if it was going to come out tasty or not and whether it was gonna be too soupy or be sort of thick, the way I wanted it to be.
This recipe included celery, carrots, chicken broth, tomato sauce, cannellini beans, Garlic, olive oil, onion, basil, parsley, oregano, water, salt, pepper, Ditalini pasta and parmesan cheese. CLICK HERE to see the full recipe and how to make it.

The initial recipe only called for 1 carrot, 1 celery and 1 can of beans. I doubled those up. I also used about 8-9 oz of pasta instead of 6. Subsequently, the leftovers were less "Soupy" than the pot looks. So if you like that, then go with it! But if you want it more soupy, then either add more liquid or stick with 1 carrot, 1 celery, 1 can of beans and 6 oz of pasta. That should help. I was really worried as I was cooking it because it seemed REALLY watery as I was making it, but it thickened up as it cooked. This meal is going to be one of my GO-TO Winter meals. I can't wait for it to be winter, actually. :-)
DINNER: I had a gig with Adam and the Newharts tonight at the 4th of July fireworks in Pearl River. And having eaten lunch at 3pm, I was not sure how dinner would work. Welp, after the sound check, Adam showed up with a pizza. Everyone in the band busted my chops. . . . . "Joe, do you like pizza?" or "I wonder if Joe is gonna have some pizza!?!?!" but I truly said to Raul, "I don't think I'm gonna have any. Trying to eat better, had a late lunch. . . .. . etc." Then Adam gave me a plate and I realized, "WHO AM I KIDDING?" :-) So I grabbed a single slice of pizza and moved on. It got the job done and got me through the gig. It was actually perfect.
DINNER #2?: When I got home around 10pm, I needed something otherwise overnight was going to be uncomfortable. Instead of a snack, I reheated one of last night's breaded chicken breasts that Kristyn cooked. (Air Fryer for 6 minutes made it a little too dry. Shoulda done 5 minutes.) If you haven't noticed, I'm soooo into the air fryer situation these days. You'll hear about that, the pizza oven, the Blackstone Griddle. . . . . . I like my cooking toys. :-)
That's all I have for today. I really cut out the snacking today - that's for sure. It was a good day. No regrets about anything I ate today.
WEIGHT LOSS UPDATE: As of my morning weigh-in on 7/5/23, I am down 1.4lb from yesterday and 6.3lb overall since the beginning of day 1.
