Day 2 (7/3/23) - OMG - Just Me & the Kids

Day 2 has arrived.  Some may be shocked that I made it this long.  (I might be one of those people. . . . . . )

Today was quite a day.  Kristyn went back to work for her 1/2 day Summer School and I was home with the 3 kids.  Had to bring Conor to the doctor and ran into one of my early on former students, who was Conor's doctor!!!  How cool is that?  What a nice surprise!  

So before I go any further, I want to reiterate, after my first half day home with the kids by myself, Kristyn definitely had the harder job being home on maternity leave the past 3 months.  I may have long hours and lots of work to do at school, but it does not compare do the work it takes to be home all day with the kids, including a sick 3 month old who doesn't want to sleep.  That being said, Kristyn (and all the moms) is (are) my hero.  The majority of the rest of the days she is going to work, I just gotta get Joey & Giuliana to camp by 9 and then hang out with Conor until noon - so that should be much easier.  :-)

NOW:  ON TO THE FOOD!

 Breakfast: Since I did not get up in time to actually make myself breakfast before getting the kiddies out for a 9am doctor's appointment, after the doctor, we went to what my kids call "The Breakfast Store,", which is "Griddle This" in Dumont.  I had 3 Egg Whites and Taylor Ham on Whole Wheat Toast and a can of Diet Pepsi.  I know that many will say that Diet soda is not the greatest option.  I know this is true.  BUT it's a step better than Red Bull!  So for now . . . . . lay off! :-)   


This was actually a fantastic sandwich.  I really like this.  In February, I switched to this sandwich for about 6 weeks or so before I slipped back into the habit of a bagel every day.  I hope to make more breakfast at home this summer, but if I have to go out, I'll try to have this.

Snack:  Handful of goldfish and a slice of yellow American cheese.  My biggest enemy is going to be the snacking - all day, all night. . . . . it never stops!  The first step is to try to move this snacking earlier in the day and cut it out late at night. Step 2 will be to get it to be much less.  Step 3 will be to get more healthy snack options   Usually, I'd have a bowl or more of goldfish, so a handful is a victory, for now. 

Lunch: Had the same thing as yesterday - my salad with chick peas, cucumbers, vinegar and a piece of chicken.  (Blogging Hack - this is the same photo as yesterday.  I didn't take another photo of the same meal.)  :-)  Another satisfying lunch.  But it didn't not happen until probably 1:30pm.  Gotta try to get my timing better.


Snack:  The grazing continued with some Chocolate Ice Cream and a sugar free jello.  The ice cream - it was a couple spoonfuls (Is that a word?  I didn't think much of that until is was underlined in RED, which generally means it's a mistake . . . . . . ) instead of just eating out of the container until I was tired of it.  :-)  

Dinner: I had to bring Giuliana to her gymnastics, which is from 5:30 to 7:00pm.  So while I was out, Kristyn did some cooking!  She made breaded and baked chicken - of which I had 1 piece,  and pierogis, of which I had 4.  I also had a Diet Orange Soda.  Delicious dinner, and it was not until about 7:30pm, so I was pretty good for the night!  I don't think I even had any snacks later in the evening!

Water: One thing about being home - I easily drink a ton of water.  Ice and water comes right out of the fridge door and can be refilled all day without working too hard!  So I drink a lot of water and that helps a lot with staying "full."  Hoping I can keep that up. 

WEIGHT UPDATE:  The morning weigh-in on 7/4 had me down 3.1 pound from yesterday, 4.9 pounds in total.  Not bad for 2 days!  Pressure is on to keep it up.  I'm still eating plenty.  Usually the first week, the weight melts off and then after 5-8 days, I have to take it to the next level to see results continue.
