Weigh-In - Down 15.4 total (-1.1 from yesterday)
Breakfast - Two egg whites and 1 whole egg, scrambled on white bread
Lunch - Peanut Butter Sandwich
Snacking - Grapes and Strawberries! Can you believe this? It's true! I really did it. Now here is an example of when it is A-OK to eat right out of the container. :-)
Dinner - Made my Santa Fe Chicken and rice, but this time added shrimp! It was great to get back to cooking something! I've been way off the cooking train. Have pretty much maintained the weight loss, but would love to start losing again, so gotta cook more! I have this week before we go on vacation. Once vacation hits, things are going to get a little hectic. I'm hoping to do some cooking on vacation. We'll see how that works out . . . . . . . .
Snacking - Peanut Butter Pie - 1 slice (300 calories) So back in the good ol' days, when my sister and I both still lived home, she was making this "peanut butter pie" and it was awesome! She used lite cool whip, peanut butter and put it into a ready made graham cracker crust. So I figured that I needed an alternative to ice cream, so here we go! Only problem - I forgot to use the LITE cool whip which actually adds 100 calories to each slice! Regardless, my mind was in the right place but I didn't quite make it happen correctly. Will take care of that next time! I actually thought the pie crust was not as bad either. Will try to find something a little healthier next time. In any event, very tasty, easy to make and something different.
